Creamy Leek, Potato and Smoked Salmon Soup


  • 225g Willy Krauchs cold smoked salmon chopped
  • 1 1/2 C. Butter
  • 1/2 C. Whipping Cream
  • 2 Leeks halfed and finely sliced
  • 2lb Potatoes diced
  • 1 bay leaf
  • 1 litre Chicken stock ( or 4 C. of water with 4 packets of OXO by Knorr® Chicken Sachets)
  • 1 Chive stem for garnish chopped (optional)
  • 1-2 tbsp. Flour for thickening


  1. Heat the butter in a large saucepan and add the leeks and bay leaf. Cook over a low heat for 8-10 mins or until the leek is really soft




    Stir through the potatoes until coated in the butter. Pour over the stock and cream and bring to the simmer, then gently bubble for 10-15 mins until the potatoes are really tender. Then turn heat down to low



  3. Ladle 1 cup of your soup broth into a mug or soup bowl and slowly sift and whisk in 1 tbsp. of flour. Once this mixture is smooth - add it to your soup. This will aid in thickening your soup and make it an extra creamy texture. If you would like for you soup to be creamer - repeat this step.


    Add smoked salmon and simmer until salmon begins to flake and appear "cooked".


  5. Ladle soup into bowls and garnish with chives.
